Risotto



Mushrooms were on sale this past week at Safeway for .99 per 8 oz package (I bought 2). When we arrived home tonight, they were staring me in the face, so I thought I'd dig out Mom's foolproof microwave risotto recipe. Well I scanned all my recipes last year and I wasn't able to find it on my computer, but I did have a version from the magazine "Everyday Food", so I used that. I was able to follow the recipe almost exactly - I used the variation which included mushrooms (I believe that there should always be an interesting ingredient in risotto, I suppose it makes most sense for it to be a vegetable). The only change I made was that I didn't use the full amount of broth, and in fact, I think I could have used half the original amount, and it would have turned out properly. It was delicious, comforting, and best of all, we've got leftovers for later in the week!
