Soups



I first became a true soup lover when I worked at the Greek restaurant during my first two years at college. Carol made homemade soups every night. Avgolemono was standard, and then there was a soup of the day. I wish I could recall all of them, but she made lentil, fassoulata (sp?), and a delicious vegetable chowder. Soup and pita bread were free, so you can imagine, that was my meal for most shifts.

At any rate, I started making soup a few years ago, when I realized how easy it was to do, and more satisfying than opening a can of Progresso (although I still do that too, on occasion). This week, I tried a new recipe for lentil soup, and I made broccoli soup for the first time.

The lentil would have been perfect except for too much salt. :( I will try again and not add any salt. I did serve with grated Parmesan cheese.

The broccoli soup pictured above turned out very nicely, although I needed to add a bit of liquid
when we ate the leftovers the next day.

We're trying to eat lighter meals, and soups and salads are a staple.
